SPICY SMOKED SALMON

Mix kosher salt with 6 cups water & continue adding salt until an egg floats.

 

Place the salt solution on the fillet with 2 cups of real lemon juice. Place in refrigerator for 24 hours.

 

Remove the fillet. Rinse with fresh water and dry with paper towel.

 

Mix 1/3 cup sriracha sauce and 1/3 cup buffalo wing sauce or red hot.

 

Brush the sauce on both sides of the fillet.

 

Smoke with Apple wood chips in electric smoker for 6 hours at 120゚.

 

Increase the heat in the smoker to 200゚ and allow the fillet to cook until desirable dryness is achieved.
